
We left Mississippi this morning after semi-rough night. We’ve had worse but definitely a noisy night at Loves. We stopped at this Louisiana rest stop for a bite to eat and a quick selfie. No Boy in the picture because he was hot and grumpy and stayed in Betty Deux.
Breakfast for travel days needs to be quick and easy. Before we left, I put together breakfast burritos. I kept them simple sausage cheese and eggs.

INGREDIENTS
oneroll of Jimmy Dean sausage of choice cooked and ground. You shouldn’t need to drain grease if using Jimmy Dean.
about a dozen eggs scrambled nice and fluffy
cheddar cheese shredded. I used about a cup. amount to your liking
large flour tortillas
Cook each ingredient separately.
DIRECTIONS
Lay out tortillas. Spoon some sausage 😋 eggs and cheese onto tortilla. wrap by folding one side over, then left side, top, and finally, right side. You may have to tuck a little as you go. Takes practice, like diaper games a baby.
Wrap in parchment paper, then aluminum foil. I put 3 to a large ziploc bag and froze.
To cook get out night before and put in fridge. Unwrap and put in a microwave for about 30 seconds to a minute just to heat insides. I used the airfryer settings of my Ninja Combi Cooker. Rewrap burritos with aluminum foil and cook for about 10 minutes. Unwap and spray with butter spray like Pam. Cook on airfry for 3 minutes on each side until browned. Let cook slightly before enjoying it. Would be great served with sour cream and salsa!
