Cheeseburger in New Mexico Paradise

Every day, all day, our 15 year old son asks, “What’s for dinner?” Grant it, it gets annoying, but we think it’s his way of saying, “I love you.” At least I hope that’s what it means.

Eating while traveling can be difficult or fun. For us, it’s part of the draw. It’s the challenge, and it’s a chance to try new things.

I have been a Ninja Foodi fan for years, becoming quite an accomplished Cooking Njnja. I’ve used my Foodi in the camper in the past, but they are heavy, and the kids are open-top. In other words, it’s a bit of a pain. However, this year, we discovered the Ninja Combi, and I’m in love. It’s a small oven that does everything I need it to and then some. It makes perfect rice, and at the same time, I can do porkchops and green beans. Spaghetti was super easy. Not the eggs were more of a challenge. I tried these little egg rings, and well, their little faces are a bit droopy now. Live and learn. It’s all part of the great experience.

Fried rice was excellent. It makes a lot of rice, so I bag it, flatten it, and freeze it. Works great.
Cooking inside is okay, but true campers cook outside! Here, we have Indy helping prepare ingredients for noodle bowls. Who says you can’t have Chinese Take Out while camping.
I bought a Campfire Cocktail cookbook from Buc-ees. Necessary for those evenings by the fire or star gazing.

Exploring the area means stopping for food. We discovered this little gem in Reserve, NM, the county seat of Catron County. (Which, by the way, has a whopping population of around 289.) The food was delicious, the restaurant quaint and our server quick with a quip. Boy asked if he could have a plain burger, and she looked at him square in the face and said, “No!” Jim and I thought we’d die laughing. If you are ever in the area (who knows, you might) check them out. We highly recommend the burger and French dip.

Paradise? Heaven on Earth? That would be Eagle Guest Ranch. The best burgers we have ever eaten in our lives. Not once but twice. Two years ago we visited and the food was delicious and ever so fresh. Recently, we visited another establishment in the area for the second time and was unfortunately very disappointed. Not Eagle Ranch. It was still as good, if not better than the first time. We all had burgers. Jim, a bacon cheeseburger, me a green chili burger, and you guessed it Boy had his plain. Why the rave review? All the meat is fresh, and I do mean fresh. They have a convenience store attached where you can buy simple groceries and items of need. But the best is that delicious meat can also be bought from their on-site butcher. We bought four steaks cut to order and 2 pounds of ground beef.
